4ouncesfresh mozzarella (half of an 8ounce ball)(divided)
1.5ouncestorn pieces of prosciutto(around 3 slices)
½thinly sliced vine ripe tomato
1 ½cupsarugula
½tablespoonlemon juice
½tablespoonolive oil
salt to taste
ground black pepper to taste
balsamic glaze(optional)
Instructions
Preheat the oven to 450 degrees Fahrenheit.
Grease a baking sheet or pizza pan with oil and lay the dough on the pan.
Spread the pesto on the pizza dough leaving a ½ inch of space around the parameter for the crust.
Start with the first layer: break the ball of fresh mozzarella in half and store the other half back in the fridge. Take the half of the mozzarella ball/4 ounces of cheese and tear it up into pieces or you can thinly slice it. Spread half of the 4 ounces of cheese over the pesto-covered dough.
Next, layer the sliced tomato and prosciutto on top of the cheese.
For the last layer, add the last half of the mozzarella cheese.
Transfer the pizza pan to the oven and bake for 8 -10 minutes or until the cheese is bubbly and the crust is golden brown.
As the pizza bakes, mix the arugula, lemon juice, olive oil, salt and ground black pepper together.
Once the pizza is out of the oven let it cool for 5 minutes before topping it with the dressed arugula and balsamic glaze if desired. Enjoy!
