Cucumber Onion Tomato Salad

Ingredients

sliced English cucumber

cup
chopped tomatoes

cup
chopped red onion
¼
cup
rice vinegar
zest and juice of 1 lemon
around 3 tablespoons
1
teaspoon
lemon pepper
chopped dill
optional
Instructions
Chop the cucumber, tomato and onion. Place in a large serving bowl.
Mix the rice vinegar, lemon zest and juice along with lemon pepper in a small bowl. Whisk together before adding to the main serving bowl.
Taste test for additional salt if needed.
Top with freshly chopped dill if desired. Enjoy!
Notes
The ratio of salt and pepper in lemon seasonings will vary so taste test if the salad needs extra salt.
Slice or chop the veggies any way you prefer!
