    This Cucumber Onion Tomato Salad is simply delish! Made with just 6 ingredients, comes together in 20 minutes! it's easy to throw together for a quick side dish to a summer gathering.

    Why this Recipe Works!

    We all need to eat more veggies, right? Why not make them flavorful! This recipe takes little time to prep and throw together but makes eating veggies a lot more delicious.

    I grew up eating a version of this recipe that had an Italian spin-off. We would add garlic, Italian dressing and parsley.

    It was delicious! A lot of the recipes out there have this Italian influence, but I thought why not try it in a different way?

    My friend, Kelli, introduced me to the wonders of Lemon Pepper seasoning + cucumbers. If you've never tried it - omg, stop what you're doing and slice up a cucumber and sprinkle lemon pepper seasoning on the slices - life changing!

    So why not turn that into a vinegar-based dressing for cucumber, tomatoes and onion slices?

    Ingredients

    Here are the main 6 ingredients:

    • Cucumber
    • Tomato
    • Red Onion
    • Rice Vinegar
    • Lemon
    • Lemon Pepper Seasoning

    That's it! No need to add a bunch of other stuff unless your heart desires it, of course.

    Dill can work as a nice herb with the lemon!

    Lemon Pepper Vinaigrette

    A vinaigrette minus the oil!

    The dressing is a mix of lemon juice, lemon zest, rice vinegar and the lemon pepper seasoning.

    It's bright, zesty and so delish!

    If you want to use this on a salad, add your favorite oil and now you have a real vinaigrette!

    Mix it all together and you have a perfect veggie side dish to bring to any summer event.

    Can I meal prep this cucumber onion tomato salad?

    The acidity from the lemon juice will soften the tomatoes over time. It'll still taste great, but if you care about serving a beautiful dish, I wouldn't prep this ahead of time and just do day of.

    What's the best way to dice tomatoes and onions for this salad?

    You can chop or dice the 3 main ingredients (cucumber, tomato, red onion) any way you want. I like the larger slices to make it more of a salad. However, you could dice them all up and make it like a salsa or dip. Whatever floats your boat!

    Cucumber Onion Tomato Salad

    This 6 ingredient Cucumber Onion Salad is easy to put together and so delish! Made with lemon pepper seasoning + lemon zest.

    Ingredients
      

    • 1 sliced English cucumber
    • 1 cup chopped tomatoes
    • ½ cup chopped red onion
    • ¼ cup rice vinegar
    • zest and juice of 1 lemon (around 3 tablespoons)
    • 1 teaspoon lemon pepper
    • chopped dill (optional)

    Instructions

    • Chop the cucumber, tomato and onion. Place in a large serving bowl.
    • Mix the rice vinegar, lemon zest and juice along with lemon pepper in a small bowl. Whisk together before adding to the main serving bowl.
    • Taste test for additional salt if needed.
    • Top with freshly chopped dill if desired. Enjoy!

    Notes

    • Lemon juice can break the veggies, especially tomatoes down a bit. If you care about appearance, I wouldn't prep the salad too far in advance.
    • The ratio of salt and pepper in lemon seasonings will vary so taste test if the salad needs extra salt.
    • Slice or chop the veggies any way you prefer!
