Ingredients
2
cups
whole wheat flour
⅓
cup
brown sugar
unpacked
¼
cup
white sugar
1
tablespoon
cinnamon
2
teaspoons
baking powder
½
teaspoon
salt
1
cup
milk
½
cup
avocado oil
1
teaspoon
vanilla extract
2
eggs
1
diced apple
Instructions
Preheat the oven to 350 degrees Fahrenheit. Spray a muffin tin with oil.
In a large bowl, whisk together your whole wheat flour, brown sugar, white sugar, baking powder, cinnamon and salt.
In a smaller bowl, mix together the avocado oil, milk, eggs and vanilla extract.
Create a well in the bowl of dry ingredients and pour your wet ingredients into the well. Fold together until incorporated.
Fold the apples into the batter.
Fill muffin tins almost all the way full and bake 20-25 minutes or until a toothpick comes out clean.
Notes
Make sure to dice the apple small so that it cooks through. A chopped thickness will leave the apple more crunchy than soft.
