    Healthy Apple Muffins

    Try these Apple Muffins made healthfully with whole wheat flour, minimal added sugar and packed with cinnamon apple flavor!

    Muffins are an easy on the go breakfast or snack. Grab and go for a hike or long road trip. You can easily freeze a batch and reheat them too.

    Change up your breakfast routine by making a batch of muffins. It'll be a nice change up for the mornings!

    For this muffin recipe, the stars are cinnamon and apple. Start by selecting your favorite crispy, juicy apple. You only need one apple for this recipe.

    If you prefer tart, go the granny smith route. If you want a touch of sweetness, go for a gala or honey crisp.

    Ingredients

    The ingredients are pretty straight forward and listed below:

    • Whole wheat flour
    • Brown sugar
    • White sugar
    • Cinnamon
    • Baking powder
    • Salt
    • Milk
    • Avocado oil
    • Vanilla extract
    • Eggs
    • Diced apple

    Instructions

    Mix the dry ingredients and wet ingredients in separate bowls. Pour wet ingredients into dry ingredients and mix until combined.

    Add apples and boom the batter is done. Pour into muffin tins. You can fill them until they're almost full like the picture below.

    Bake until a toothpick comes out clean. Enjoy warm, fresh out of the oven or allow them to cool to enjoy later!

    They don't puff up too much, so you can really fill up the muffin tins!

    You can store them in fridge for a few days or freeze up to 3 months. I love freezing muffins because all they take is around 30 seconds to reheat.

    Recipe Tips and FAQs

    How many apples do I need for the recipe?

    1 apple will do! You'll get around 1 cup of diced apple, so if you have mini or lunch box apples you may need 2.

    Will the apple be crunchy or soft in the muffins?

    The smaller you dice the apple, the less likely it'll be crunchy and softer. I would dice the apple even more finely than I have in these pictures to get a soft apple texture.

    How do I store muffins for later?

    You can freeze muffins for up to 3 months later. They reheat in 30 seconds in the microwave. They will also last in the fridge for about 3 days.

    Healthy Apple Muffins with cinnamon made with fresh apples are an easy snack on the go or breakfast. They freeze and reheat well, making them perfect for meal prep!

    Ingredients
      

    • 2 cups whole wheat flour
    • ⅓ cup brown sugar (unpacked)
    • ¼ cup white sugar
    • 1 tablespoon cinnamon
    • 2 teaspoons baking powder
    • ½ teaspoon salt
    • 1 cup milk
    • ½ cup avocado oil
    • 1 teaspoon vanilla extract
    • 2 eggs
    • 1 diced apple

    Instructions

    • Preheat the oven to 350 degrees Fahrenheit. Spray a muffin tin with oil.
    • In a large bowl, whisk together your whole wheat flour, brown sugar, white sugar, baking powder, cinnamon and salt.
    • In a smaller bowl, mix together the avocado oil, milk, eggs and vanilla extract.
    • Create a well in the bowl of dry ingredients and pour your wet ingredients into the well. Fold together until incorporated.
    • Fold the apples into the batter.
    • Fill muffin tins almost all the way full and bake 20-25 minutes or until a toothpick comes out clean.

    Notes

    1. Make sure to dice the apple small so that it cooks through. A chopped thickness will leave the apple more crunchy than soft.
