As much as I love cilantro in salsas, mint has a whole different flavor profile and meshes so well with peaches.
You get sweet, fresh and crispness from the bell pepper, jalapeno, onion, tomatoes and peaches and a refreshing bight pop of mint and lime tie it all together.

You'll dice everything into bite-size pieces and mix it all together. I like to let it sit for a little before serving so the flavors have time to marinate.

Storage

I would only use fresh peaches in this recipe. Since frozen peaches will need to defrost, the texture may be off.
If you bought one bunch of mint, I would chop about half of it for the salsa.
